Poha is a popular Indian breakfast dish made with flattened rice flakes. Here is a simple recipe to make it:
Ingredients:
- 1 cup poha (flattened rice)
- 1 small onion, finely chopped
- 1 small potato, peeled and diced
- 1 green chili, chopped
- 1/2 tsp mustard seeds
- 1/2 tsp cumin seeds
- 1/4 tsp turmeric powder
- 1/4 tsp red chili powder
- Salt to taste
- 1 tbsp oil
- A few curry leaves
- Fresh coriander leaves for garnishing
- Lemon wedges for serving
Instructions:
- Rinse the poha in a strainer and soak in water for 2-3 minutes.
- Drain the water and set aside.
- Heat oil in a pan and add mustard seeds, cumin seeds and curry leaves.
- Once the seeds start crackling, add chopped onion, green chili and sauté until onions turn translucent.
- Add diced potato and cook for 2-3 minutes.
- Add turmeric powder, red chili powder and salt to the pan and mix well.
- Now add soaked poha and mix gently.
- Cover the pan and cook for 5 minutes on low heat.
- Garnish with fresh coriander leaves and serve hot with lemon wedges.
