Carrot halwa, also known as gajar ka halwa, is a popular Indian dessert made with grated carrots, milk, sugar, and ghee. Here's a recipe to make carrot halwa:

Ingredients:

  • 1 lb carrots, peeled and grated
  • 3 cups whole milk
  • 1/2 cup sugar
  • 1/4 cup ghee
  • 1/4 cup chopped nuts (such as almonds, pistachios, or cashews)
  • 1/2 tsp cardamom powder

Instructions:

  1. Heat ghee in a heavy-bottomed pan on medium heat. Add the grated carrots and sauté for 5-7 minutes until the raw smell goes away.
  2. Add milk to the pan and bring to a boil. Reduce the heat to low and let the milk simmer until it thickens and the carrots are cooked, stirring occasionally.
  3. Add sugar to the pan and stir until the sugar dissolves. Continue to simmer on low heat until the mixture thickens to a halwa consistency and the milk has evaporated, stirring occasionally.
  4. Add cardamom powder and chopped nuts and mix well.
  5. Serve the carrot halwa warm or cold.

Note: You can adjust the amount of sugar based on your preference for sweetness. You can also add a pinch of saffron for flavor and color.
